the % symbol stands for the modulo operator.

Finally got it after all the hints =) BTW, since it's ASCII, shouldn't it be % 128 instead, not that it changes much. |

ASCII characters are one unsigned byte each, 28 = 256. Granted, alphabetical characters happen to lie in the lower 128.
