How to get compelete information (tag) of your music?
Especially converted, empty tagged music?
Just like if you rip original CDs and get the info, even with it's album picture...

most mp3 player software can write and edit ID3 tags.
knowing what information to put is another story.
there are programs out there which attempt to determine the correct tag information for a CD you slot into your computer, but I don't know what this technology is called.

Do what I do, I find out the important stuff like the title, artist and album. You can get some of this information at places like wikipedia and shopping sites. If you use windows media player, you can right click the song and click find album info. It sometimes has the info in the database.

Try JetShell PRO, that's where I get my music information, but it depends on the mp3 you download, since some have incomplete information about the music, but you can always edit them in JetShell PRO
